Simple, clever and made to last

I bought my Donvier many years ago and have since used it on and off, but lately I really got into making ice cream thanks to a glut of fresh seasonal fruit. There are just a few parts: an outer container, the metal cylinder, the paddle, a clear plastic lid and a turning handle. You can buy (much more expensive) electric ice cream makers but I actually enjoy the manual process of turning the handle and having total control over the finished product. Plus, no noise, no vibration, it's light, takes very little space to store and can be used anywhere without worrying about plugs and voltage requirements. Making your own ice cream, sherbet or frozen yoghurt is highly rewarding as you have infinite choices of ingredients and can customise standard recipes to allow for dietary preferences (i.e. low or no fat, sugar content, eggs or not, favourite fruits and flavours, etc.) and with this appliance, the process is really easy. The main reason for disappointment comes down to insufficient chilling of the cylinder and/or using a warm mixture. You need a constant freezer temperature of at least -18ºC (0ºF) for at least 7 hours, which should be achievable in most cases. The freezer part of my fridge has no temperature controls but works fine.With an appliance this simple, you should get excellent results immediately, but you will find that a little practice and experimentation definitely help. I have tried the richer cooked bases and incorporating eggs, but my favourites are the really fast fruit-based mixtures. One litre recipe: ½ litre fruit (melon, peaches, apricots, mango, papaya, berries or bananas can all be roughly crushed with a fork); add sugar (I use 100 g or half of what most recipes call for and go by taste); add 400 ml combined milk and cream (again I use very little cream). The manual, which is very easy to follow, includes a good selection of recipes to get you started.The really important tip I can give is to quickly pour the mixture and start cranking immediately because in a properly frozen cylinder, it will start freezing in seconds and the paddle will have trouble moving. Turning the handle anti-clockwise can help but it's best to get the process started and add the last drops later. Do NOT fill the cylinder (leave an inch of space) and you will know that the ice cream is ready when it has expanded and more than fills the cylinder. The finished product can be spooned into a freezer-proof container for a short firming-up or for storage. The only restriction with this machine is that it will only make a litre at a time because you need to let the cylinder reach room temperature to wash it (in cold water) and then leave it to freeze again for 8 hours or so. For me that is fine but if you want to make several batches, the only option is to invest in an electric model.
