A foolproof method that eliminates guesswork, all you need do is seal your seasoned food inside a vacuum bag, submerge it in the 9-litre water bath preset to the required temperature, then walk away! Throughout the cooking period, anything from 30 minutes to 72 hours, the SousVide will precisely regulate the temperature to ensure optimum cooking and perfect results. Not only does it taste so much better, sealed inside the bag to cook in its own juices food retains its natural goodness to make sous vide cooking a healthier option; economical too as, given the sous vide treatment, even the cheapest cuts of meat are transformed into succulent meals.

I was a bit sceptical at first and was going to try the large slow cooker + PID controller method but when Amazon had a damaged box one of these at a healthy discount I snapped it up. The unit itself was in perfect condition.The size of the demi is manageable and usable in most kitchens. Mine is pretty small and already cluttered and there was no problem finding space. If necessary just chuck out your deep fryer.The control panel is a bit plasticy and will no doubt be what eventually fails, note to self - must hang on to that PID.Yes the lid is uninsulated but I just drape a tea towel over it.Generally I would be happier if the whole thing was insulated as my kitchen regularly gets down to 6 degrees C overnight in the winter, with the heating on. Not sure how the demi will cope with that.First outing was 72hr at 55C brisket with new potatoes, baby carrots and green beans, the veg also being done sous vide while the brisket was kept warm out of the bath after cooking. The meat was the cheapest lump of roast I could source from the UK's most hated supermarket.Result, pink tender meat easily servable to discerning guests, needed a little sauce just to be spot on, mushroom, basil and chilli with a touch of yoghurt in my case. Horse radish would have been good. Quite a surprise. The green geans were the only thing that would have been better prepared by another method but again these were supermarket, transported across the globe items and unlikely to have been at their freshest.This method of cooking does nothing by itself to improve flavour, other than by stopping you from over cooking so it will not turn brisket into finest sirloin steak but it will make the meat as tender as an average to good steak. If necessary simply enhance the flavour with seasoning or sauces. Veg are fine. Will be interesting to try some fish.If you like to experiment and can convince yourself you will use this device I have no hesitation in recommending it. It drops the one star for lack of insulation, second rate control panel and lets face it, being ridiculously over priced. There is now a smaller competitor at half the price on the market but I rejected that option on the basis of the temperature control specs.Oh yes and whatever device or sous vide method you use, vacuum packing is a real pain.Pork ribs next I think, or maybe boil in the bag lamb curry or ................................

I have had exactly this model for about a year (although I didn't buy it through Amazon). I only use it a couple of times a month. These are my thoughts:Positive points:It regulates the temperature well, within +/-0.5C of what you set it to.It heats up relatively quickly.Its silent.It does what it was designed to do.Negative points:Its cheaply made: The lid for mine does not fit correctly and the LCD screen is not completely horizontal.Its not that well thought out: Why put a partly metallic top on to something that has an easily marked non-stick surface, at least protect it with some plastic.The perforated bottom grill has rough edges which can scratch the non-stick inside and it corrodes slowly (i.e. don't leave water in the machine for long periods and don't leave the grill in the water. Again why make it out of part metal, just make it plastic.The inside scratches easily.If it broke I probably wouldn't buy another, you could make your own for a third of the price that did the same job. Overall it's a nice concept but the manufacturers are making a massive margin on this cheaply made product

Cooks pork and meat beautifully leaves it so tender it just melts in your mouth . I can use the cheaper cuts of meat and still have good tender meat
